    I'm obsessed with these too and would love to know if you found or made up a recipe.

  2. Well I've been doing a lot of experiments with this one - I have a recipe that is getting there - but something is still missing. I'll dig it our for you in the next couple of days. If you try it you might be able to tell me what the secret ingredient is! Thanks for reading my blog!

  4. Hi Amanda, here is the lemon macadamia shortbread recipe I've been mucking around with:

    Ingredients

    150gm (3/4 cup) caster sugar
    300gm soft butter (unsalted)
    300gm (2 and 1/4 cup) plain flour, sifted
    150gm (1 cup and 1 tbsp) cornflour, sifted
    100gm well chopped macadamias
    2 tspn finely grated lemon rind

    method:

    Oven to 160 degrees celcius
    1. lightly beat sugar and butter till combined
    22. Fold in flour, cornflour, macadamia nuts and lemon and stir together until you can make a ball
    3. roll out until 5mm thick, then cut into desired shape
    4. Bake for about 10 minutes, but do not let the shortbread brown (it needs to be still pale)

    This recipe is still under construction! I'm still working on the right combinations of things. This is partly taken from 1 I found in "Good Weekend", and partly from Australian Women's Weekly online.
